CLEANING AND PRE-COOKING
  1. *Check and remove the slimy green at the back of the pieces while washing under water. *Make sure you clean till the water is clear . Place the washed piece into a sufuria with cold water and bring to boil for 15 mins without covering.This sterilizes the piece. *Drain of the hot water then put fresh water and bring to a boil,cook while covered up to 3 hrs or until soft to your liking.Keep adding water as it reduces while simmering. *Check if its done by cutting a small piece and bite into it. *Allow to cool before cutting them
DIRECTIONS
  1. Under medium heat ,fry the onion and ginger in minimal oil until it starts to slightly brown.Add the garlic now and allow to cook.
  2. Add the curry powder and stir into the onion for about 1-2 mins,under medium heat.Add the cut up pieces and stir into the onion and allow to cook for about 3-4 mins.Constantly stir the mix to avoid it from burning.Add a little water if it gets too dry.Add tomatoes now,if preferred,and allow to cook until softened.
  3. Add the cut peppers and stir as you allow them to cook by covering the top.Cook for further 4 mins .Taste while adjusting the seasoning and finish by adding your dhania.
TIP
  1. When buying your tripes,avoid pieces with lot of white part as they are tougher to cook. Buy even looking pieces to cook evenly
